New Generation of Fried Foods
Frying oils and the foods fried in them are evolving to fit the needs of a new generation of health-conscious consumers.

saturated fats are not all bad. Saturated fats raise high-density lipoprotein (HDL) cholesterol. The ratio of total cholesterol to HDL cholesterol is a more specific marker of coronary artery disease than is low-density liopoprotein (LDL) cholesterol.
Saturated fatty acids as well as hydrogenation are important because they impact frying-fat stability. Oil stability may be less of a concern in the home kitchen where it might be used once and tossed. The rigors of industrial or foodservice operations demand fry life to extend beyond a couple of batches. Polyunsaturated fats, such as soybean oil, corn oil and cottonseed oil, break down quickly when exposed to air.
The breakdown products from polyunsaturates, aldehydes, are much more reactive than those of monounsaturated or saturated fats. Their consequences to human health are of concern. Two of these aldehydes, 4-oxo-[E]-2-decenal and 4-oxo-[E]-2-undecenal, have been linked to some neurodegenerative diseases and certain cancers.

Novel Form of Vitamin B3 May Prevent Obesity
New research published in the journal Cell Metabolism found high doses of nicotinamide riboside (NR), a novel form of vitamin B3 that is found in small quantities of milk, may be a new weapon in the fight against obesity.

Researchers found that men who drank more than seven cups of tea per day had a significantly increased risk of prostate cancer compared to those who drank no tea or less than four cups per day.
"We don't know whether tea itself is a risk factor or if tea drinkers are generally healthier and live to an older age when prostate cancer is more common anyway."
"We found that heavy tea drinkers were more likely not to be overweight, be non alcohol-drinkers and have healthy cholesterol levels.
"We would therefore not wish any man to be concerned that drinking a moderate amount of tea as part of a healthy diet will put them at an increased risk of developing prostate cancer."
